Rice is carefully crushed into small pieces and each piece is carefully fried to create this mouth-watering deep-fried rice cracker that blossoms with our unique manufacturing method. Our secret is to spray the dough with water just before frying. This process creates fine, beautiful cracks on the entire surface of the fried rice cracker, giving it the appearance of a blooming flower. When frying the dough in oil, each rice cracker is carefully placed in the wafer and carefully deep-fried. This results in a flat, round rice cracker that is also light and easy to eat without being oily. These rice crackers are then carefully dried over a long period of time, resulting in a cracker with a soft texture.
■Flavors
・Soy Sauce: The bright color, mild saltiness, and umami taste of "nama shoyu" (freshly squeezed soy sauce) is used. We use 30% freshly squeezed soy sauce that has not been heat-treated. Three types of soy sauce are blended to create an aromatic, mildly sweet soy sauce flavor.
・Shrimp: Using "ama-ebi" (sweet shrimp), which is savory and has a strong flavor. The sweet sauce, which is blended in an exquisite balance, enhances the rich flavor of the prawns and gives the dish a lingering taste.
