■Stewed Radish
To achieve the thick texture and broth like flavor of daikon radish, a pre boiling process in dashi simmered soup was implemented. A total of five kinds of vegetables are used: radish, onion, carrot, spinach, and green onion. The sweetness of the vegetables is enhanced by the addition of white soybean paste, which gives the dish a gentle flavor.
■Fried Burdock Root
By frying burdock root in sesame oil, a savory aroma and rich flavor are achieved. Using larger burdocks than those used in "Everyday Miso Soup Burdocks", you can enjoy the crispy texture of the burdocks. The combination of rice miso and red dashi (dashi soup stock) gives this miso soup a rich, umami flavor.
