Garlic and pepper are added, and powdered soy sauce and vegetable umami create a rich, pork bone flavor. Naturally, the noodles also contain no animal-based ingredients whatsoever, resulting in firm, medium-thick noodles. Furthermore, by avoiding the use of coloring agents (gardenia) in the noodles, we have achieved export to a wide range of countries. ■Spicy Tonkotsu Style (156g) We've added a moderate spiciness to the tonkotsu-flavored soup, creating a meticulously crafted dish that preserves the authentic “umami” of tonkotsu.
