■Agnesi is Italy's oldest pasta brand, founded in 1824 in Imperia, a port town near Genoa in the northern Italian province of Liguria, about 200 years ago. The durum wheat semolina used is 100% Italian. It is made using a slow drying process at a medium temperature of 70°C (158°F), so it stays al dente for a long time, which is the best texture. This is the special spaghetti that we use on the menu at Pietro Restaurant.
