Uminosei Yakishio Baked Sea Salt (60g)
We have made our popular arashio (coarse sea salt) into yakishio (baked salt) so it is even more light and easy to use! Yakishio is coarse sea salt that has been roasted to remove the water content and bitter taste, resulting in salt with a milder taste than regular coarse salt. It is recommended for dishes that require quick seasoning, such as stir frying, because its finer particles allow the flavor to blend easily. Our arashio is made by the traditional Japanese salt field salt making method using the power of the sun, wind, and fire, and by pumping up clean seawater from the remote island of Izu Oshima, where the Kuroshio Current hits. This arashio is then baked at high temperatures using a traditional salt pot firing method learned from the Oshioden Shrine of the Ise Jingu Shrine, so it will never become damp, transforming it into yakishio. Since it is baked at a high temperature of 600 degrees celsius or higher, the component of bitterness (magnesium chloride) that gives it its delicious flavor has been decomposed. However, the amount of magnesium remains the same!
